INGREDIENTS

  • 470g lukewarm water
  • 2 tsp salt
  • 1 tbsp extra virgin olive oil (and a lot more extra for drizzling)
  • 7g instant yeast
  • 560g bread flour

STEPS

1. Combine water, oil, yeast and salt. Once combined, add flour and mix until the flour is well hydrated. You should have a very sloppy/sticky dough, so add more water if you need in order to achieve the right texture.
2. Cover the bowl with cling wrap and leave to rest for 30 minutes at room temperature
3. Start first round of stretch and folds. Pick up the dough from one side of the bowl and stretch it up and over to the opposite side of the bowl. Repeat this process all around the bowl. Cover and let it rest for 30 minutes. Repeat this process another 3 times for a total of 4 rounds of stretch and folds.
4. After the fourth round, cover and leave in the fridge to rest overnight.
5. The next day, generously grease your pan with olive oil.
6. Take the dough out of the fridge and do a final set of stretch and folds before transferring the dough into the prepared pan
7. Drizzle the dough with olive oil, cover and let rise for another 1 hour. Meanwhile, preheat your oven to 220 degrees Celcius fan forced.
8. Drizzle more olive oil on the dough, dimple with fingers and place any desired toppings on top. Sprinkle with flaky sea salt and bake in the oven for 20-25 minutes.
